Winemaking Notes

Combination of two separate winemaking treatments; 1) skin-fermented, full MLF and aged on lees and ullage without sulphur dioxide for 20 months 2) barrel fermented with full solids, partial MLF and matured on lees for 20 months. Maturation took place in a combination of neutral 500L puncheon barrels and small stainless steel vats. Racked, blended and bottled without fining or filtration in December 2024.
