Winemaking Notes

100 % Chardonnay hand-picked and whole bunch pressed to neutral barrique and puncheon barrels with full solids for native fermentation and MLF. Raised for 16 months on lees, in full barrels, with zero added SO2.
Blended and bottled in July 2024 for release on the 17th July 2024.
112 Doz produced.
