100% Pinot Noir handpicked. A combination of fermentation treatments including whole bunch, whole berry and carbonic maceration, each fermented via ambient yeast. Pressed to 5-7 year-old 500L puncheons for 7 month elevage on lees before blending and bottling without fining or filtration.
